The Role

As a Chef de Partie at Cafe Sydney, you will leverage your culinary expertise to manage and excel in a designated section of our high-end kitchen, which operates 7 days a week under the leadership of Executive Chef Sarahjane Brown and Head Chef Hamish Waddel

This role requires:

  • Menu Planning: Support crafting sophisticated menus, accurately estimating food and labour costs, and proficiently ordering food supplies.
  • Quality Control: Monitoring dish quality throughout all stages of preparation and presentation to maintain impeccable standards.
  • Collaborative Engagement: Engaging in discussions about food preparation issues with managers, kitchen staff, and waiting staff .
  • Culinary Skills: Demonstrating refined cooking techniques and offering guidance on cooking procedures to junior staff.
  • High-Level Preparation: Executing food preparation and cooking that aligns with Cafe Sydney’s standards.
  • Team Development: Training and mentoring team members, fostering growth nwithin the kitchen brigade.
  • Food Safety & Hygiene: Adhering to meticulous food storage, preservation, and thawing techniques. Enforcing rigorous hygiene regulations and food safety practices.

    Looking for a chef to create a Classic italian  breakfast menu lunch menu and dinner menu.

    We are looking for an ambitious Sous Chef to join our traditional Italian  osteria with a 45 capacity. We will be a Pasta, wine bar, classic osteria and will cater for Breakfast, Lunch and Dinner

    You will be working with some industry veterans and will assist in the setup and assembly of the kitchen team, prepare and present our menu as per our recipe cards, and deliver exceptional traditional Italian hospitality.

    Essential Requirements:

    • Minimum 5 years in a kitchen management role
    • Prior experience with Italian cuisine a must
    • Understanding of hospitality cost control measures
    • Ability to keep cool under pressure
    • Excellent attention to detail
    • Excellent grooming standards
    • Formal cooking qualifications 

    Responsibilities will include:

    • Managing the kitchen team and leading as an example

    Knowledge, Qualifications, skills and Attributes:

    • Experience in Pasta, Grill and Woodfire Pizza section

    • Working knowledge of WH&S and food safety procedures.

    Key Responsibilities & Accountabilities:

    • Ensuring standards in food quality, consistency and WH&S are met
    • Accountable for food preparation and presentation to ensure quality and restaurant standards
    • Ensures a first in first out rotation system and verifies all food products are properly dated and organised for quality assurance
    • Follow food standards including presentation, products, and service style among others.
    • Acts as liaison to front-of-house employees to ensure proper food service temperature
    • Seasons food according to recipes or company need
    • Prepares any necessary sauces or accompaniments before meal service begins
    • Cleans up after business hours
